Question by David: What do you "refresh in cold water" when cooking? Why do some recipes tell you to “refresh” a vegetable under cold running water after cooking? Does this add flavor? Crispness? Is it simply to cool down the food for use in a dish served cold? Best answer for What do you "refresh in cold water" when cooking?:

Answer by jade_calliope
What it does is stop the cooking process. Just because you take it out of the pan does not mean it stops cooking. There is still residual heat that continues the process further. The ice bath is used whenever cooking vegetables, especially if you are blanching them, because it stops the cooking and preserves the color, flavor and crispness of the vegetable. For warm dishes, you usually end up heating them up slightly before you serve OR you are serving them with warm items which help raise the temp.

It stops it from cooking any further. Heat cooks even after the food item comes off the stove. Therefore, by putting the item under cold water, it stops it. I never heard the word "refresh" in cooking though.

Hi: It stops the cooking process and also keeps the color of the vegetables so it looks better! veggies over cooked get limp and lose their color.

Answer by DJ
Yes it makes veggies retain their crispness and a fresher sweeter flavour by immediately stopping any further cooking by latent heat. It is good for some other foods too, like for some noodle dishes... I have used this method for rice noodles, pasta, bean sprouts, carrots, zuchinni, snow peas... and more! :) Think of it as a spa treatment for your food! LOL :D Have you ever soaked in a hot-tub and then plunged into a cold pool? Very refreshing! P.S. " refresh in cold water" could also be referring to rehydrating something, as in soaking dried mushrooms, or even re-crisping some raw veggies which have gone limp , like celery or carrots
